Stuffed Capsicum


Recipe suitable for ketogenic weight loss


  1. Cut lid off capsicum and remove the seeds.
  2. Mix all other ingredients together.
  3. Stuff capsicum with mixture and replace lid.
  4. Place on an ovenproof dish brushed with olive oil. Bake in a 200ºC oven for 45 minutes


  • 1 red or yellow capsicum
  • 1/2 onion finely chopped
  • 2 small tomatoes, seeded and diced
  • 4 medium mushrooms finely chopped
  • Freshly grounded pepper
  • Tbsp chopped parsley
