Combine all ingredients with a whisk.
Spray four small microwave safe dishes
with oil. Spoon mixture into each dish.
Microwave uncovered, on HIGH power
for 1 – 1½ minutes or until set. Stand for 5
minutes before turning out onto serving
dish. Serve immediately.


• 2 eggs
• ¼ cup chopped bacon
• ¼ cup chopped shallots
• ¼ cup grated light tasty cheese
• ¼ cup grated carrot
• Oil spray
