- Use a vegetable peeler to make long thin strips of carrot.
- Lay on an oven tray and put into a oven preheated to 160 degrees.
- Cook for 30 mins turning often.
- Spray lightly with cooking oil and cook at 180 degrees for another 5 to 10 mins or until crispy

- Herbs, salt and pepper to taste
